|
5 plus 2 tablespoons light butter, softened
2 3/4 cups confectioners' sugar
1/2 cup powdered cocoa
1/4 teaspoon light salt
|
3 tablespoons fat-free sweetened condensed milk (not evaporated)
1 teaspoon vanilla extract
1/2 cup real semisweet mini-morsels chocolate chips (in baking aisle)
|
| |
|
- Line an 8 or 9-inch square pan with wax paper.
- In a medium-size bowl with an electric mixer on low speed beat together the 5 tablespoons butter, confectioners' sugar, cocoa, salt, milk, and vanilla until well blended. The mixture will be super stiff.
|
 |
- Do not do this next step until the first step is completely finished. In another medium bowl melt the remaining 2 tablespoons butter with the chocolate chips in a carousel microwave. Stir the chocolate and butter together after 1 minute. Cook for 1 more minute and stir. If needed, continue cooking for 30 seconds and then stir until the chocolate is completely melted. Do not boil. Simply cook enough to completely melt the chocolate.
- With a spatula put all of the melted chocolate chips into the first bowl. Stir with the spatula until ingredients are well mixed and then knead the fudge with your hands for about a minute longer.
- With your hands press the fudge into the prepared pan.
- Cut into 64 (1-inch pieces.
Variation: For Fudgy Balls, follow the fudge recipe exactly and then roll each piece of fudge into a ball with your hands.
Yield: 64 (1-inch) pieces
Preparation time: 15 minutes or less
